The missing joint is the real knee (and consequently ankle behaves like knee, so you can count ankle as missing too). It’s not human anatomy applied to pony (though that too), it’s a very common (even the show does it sometimes) mistake of misunderstanding the anatomy: assuming that the ankle is the knee, because knee (it’s next to the body) isn’t easy to see on ponies.
Yes, hind legs are absolutely like human legs. Like human legs with giant, vertical foot and one toe and very short and muscled-up shin and thigh.

I dont see any missing joints but hind legs dont really bend like that and it looks really painful,
her front legs look better but the “wrist” joint is a bit further back on ponies,
it looks like the artist basically applied human anatomy to pony
